Yes, Dario Cecchini is a hard-nosed stickler for tradition and respect for the animals that have given their lives so that you might eat.
He’s also a fab host and runs what is undoubtedly the world’s most interesting bucher shop. He’s a showman. He’s charming. He’s a hardass on the issues of eating local, eating meat, and eating well.
I’m a fan. Obviously. Dare I say we need more Dario Cecchinis and fewer industrial crap food factories?
